Last week I ran across this recipe from the Pioneer Woman. This woman is the main reason I think the kitchen must be an appealing place...she's my favorite kind of funny: hilarious self-deprecating humor while proving just how talented she is. Read her blog, and love it. And she has a basset hound named Charlie! [My love of that name will take up a whole blog of its own...later.]
Anyway, Fig-Prosciutto Pizza with Arugula. The blend of sweet and salty was enticing. I picked up the ingredients at Whole Foods (including freshly pre-made pizza dough! Huge time saver...I'm going to be making lots of pizzas now that I know that exists.), but we substituted pancetta for the prosciutto.
Long story short, this pizza has the potential to be irresistible. I, of course, went heavy on the fig, and the pancetta couldn't balance it out. It was really sweet. But I'm definitely going to make it again, and lighten up on the fig, while using the original prosciutto. I'll report back!

Oh yeah, and it's beautiful. That counts for a lot with me.
