There's obviously nothing fancy to this meal, but it was quick and yummy, and I count that as a win. The couscous was just a basic one, which I doctored up with some chicken broth, garlic, parsley, and a truly impressive beefsteak tomato. I soaked the chicken breasts in a buttermilk and egg mixture, then coated them in panko bread crumbs (simply the best...they're way lighter than any other kind) and cooked them over high heat in oil with some lemon juice (love my citrus) for about 6 minutes on each side. Oh, and the spinach is because I feel like Popeye when I eat it. Simple as that.
What are your go-to quick meals? I have more room in my non-existent apron sleeves...
I like a lot of racheal ray's recipes because they are yummy and quick. Also she loves garlic and lemons like me.

ReplyDeleteI have a recipe for an easy pasta carbonara that I make all the time. It goes like this:
ReplyDelete- cook as much pasta as you need for two people (I use bow-tie)and set aside
- chop up 1/2 pound of bacon into little pieces and cook it until you're satisfied with its crispiness
- on low heat, add pasta to bacon (draining off some grease if you want first...I don't always)
- add a beaten egg, mixed with about 1/2 - 3/4 cup milk, to the pan
- add a fistfull of fresh grated parmesan cheese (or more, to your liking) and mix it all together
The cheese and milk make a nice gooey sauce and the whole process doesn't take long and you basically only use to dishes! I even serve it to people when they come over because it feels fancy but isn't. :)
