sehr lecker

Unhappy predicament: having no ideas for dinner, and little time or energy.
Happy solution: remembering that you have a cookbook of your mom's recipes.

Several years ago, we went out to dinner at the Chicago Water Grill (which, incidentally, was one of the best places to go for drinks.  When it burned down, I think everyone at the college over the legal drinking age showed up to watch it go up in flames...and there may have been tears shed.)  My mom had a meal that she liked enough that she asked for the recipe.  Since then, my family has had "smothered chicken" on a very regular basis.  And conveniently, it's incredibly easy to make!  In fact, we had it tonight:


There are only four ingredients, but somehow, they bring out the best in each other.  First, cook the chicken as you normally would (I like to have it on high heat with lemon juice, salt, and pepper for a few minutes to give it a good color, and then on low until it's cooked through.).  Dice portabella mushrooms and green onions, and get yourself some good mozzarella.  [If you need someone with exacting standards to test your mozz, you can borrow Will.  But I want him back.]  After the chicken is done, layer ("smother", if you will) it with the cheese, mushrooms, and green onions, and broil it on 400 for about 10 minutes.  It's delish.
